The Premier Cru “Les Chevrières” vineyard is a prime site at the top of the hill overlooking the village of Chaintré. Here, thin, iron-rich, clay top-soil gives way to hard limestone bedrock. “Cooler vintages, such as 2021, suit Les Chevrières,” Romain Cornin told us. “Balancing natural richness, we see extra energy and freshness this year.” This fermented and matured for 12 months in 600 litre, oak demi-muids, and was held for a further 12 months on fine lees in stainless steel tanks before bottling. This combination gives a 2021 wine that has an intense, expressive, perfumed nose, with rich, stone-fruit aromas. Palate has super balance between concentrated, sumptuous fruitiness and fresh vitality. This is a full bodied, complex, silkily-textured wine, that has precision and finesse (for drinking 2024-2027+).

Domaine Dominique Cornin
Located in the Mâconnais village of Chaintré, Romain Cornin has taken on the reins at this family Domaine, with father Dominique playing an ever-valuable role behind the scenes. The family makes intense, finely textured, vivacious Chardonnay from their biodynamically farmed vineyards, centred in Chaintré - where their oldest vines date back to 1909. The property is fully organic certified, with Romain`s unwavering attention to detail, and passion to express terroir, resulting in him being considered one of the region`s most dynamic, and highly-respected, young winemakers. Tuning into each wine, he uses a combination of stainless steel tanks and 600 litre, Stockinger, austrian oak barrels for fermentation and maturation. Fining is never used, with only a light filtration.
