Domaine des Loups

This is a tiny estate, based in Chaux on the plateau above Nuits-Saint-Georges. Owner and wine-maker Guillaume Janiaut-Rousseau was born in Morey-Saint-Denis, and is the eleventh generation of the family to own vines here. He has been cultivating these family vineyards since 2012, and making the wines since 2017. He has meticulously homed in on the right approaches – de-stemming or partial whole-bunch fermentation, punching-down or pumping-over, etc. – to suit each cuvée. Each of his wines is beautifully crafted.
